In the baking and snack industries, trends constantly evolve. While some endure, others fall out of favor and still others merge with something else to create a new combination. Consumers are seeking and gobbling up new, fun and flavorful goodies.
The American Society of Baking has named six industry leaders who will be inducted into the Baking Hall of Fame at BakingTech 2023, which will be held Feb. 28-March 2 in Chicago.
Dividers and rounders must check a few boxes for bakeries. Accuracy comes first, as bakeries need to make sure dividers are hitting weight or volume targets without going over, which can be challenging with yeast-raised products in bakeries with fluctuating temperatures.
Companies are using systems to tie in data from multiple production lines at multiple sites across the globe to help improve processes, said Jon Gilchrist, engineering manager at Sightline Process Control Inc., a KPM Analytics brand, which among other things provides vision systems for bakeries.
