SAN FRANCISCO — Saputo Specialty Cheese highlighted three new products at the Specialty Food Association’s annual Winter Fancy Food Show Jan. 21-23.

Richfield, Wisconsin-based Saputo Specialty Cheese, a division of Montreal-based Saputo Inc., showcased its new 8 oz pillow bags, an organic version of its mozzarella and a new goat cheese.

The Stella-brand pillow bags come in three varieties:  shaved parmesan, shredded parmesan and shredded Italian three-cheese blend. The company said the pillow bags are more upscale, artisanal and gourmet than a traditional plastic container.

The new Stella-brand Organic Fresh Mozzarella is an organic version of Saputo’s traditional mozzarella offerings, says Kristy Klug, the company’s marketing manager. The product is being marketed in 4 oz balls and 8 oz logs.

The new goat cheese, Montchevre Kiss My Ash, is a vegetable ash-covered goat cheese with a marble-textured rind, a smooth ivory body and an acidulous, semi-strong taste that becomes more pronounced with age, Klug says. The Wisconsin-made cheese won a Super Gold medal at the 2017-18 World Cheese Awards. It ships in 4.4 oz logs.
