CHICAGO — The newest products from Battistoni Italian Specialty Meats are uncured deli meats that meat artisan standards.

Buffalo, New York-based Battistoni highlighted its new uncured salami and pepperoni products at the Private Label Manufacturers Association’s annual show in Chicago. Both products come in half-stick and sliced versions, says Krista VanDusen, regional sales manager.

“A lot of companies have done uncured but they haven’t made it taste good,” VanDusen says. “They’re mainstream processors who use extenders and fillers.” For years, she says, customers have been looking for uncured versions of high-end specialty meats like those produced by Battistoni.

The new meats are currently on the shelves of grocery stores in Western New York, with a wider rollout planned, VanDusen says.
