According to the IDDBA report Snacking Opportunities: Building Better Snacks, instore bakery departments are facing the unique challenge of offering consumers products that meet their growing requests for healthier options. For bakeries looking to assist customers in meeting wellness goals, there are many opportunities to offer bakery products that are healthy.
Consumers are looking for freshness in the bakery. They want to know that their purchases were made that day. Think about adding a tortilla press stand in the your supermarket's bakery, so consumers can watch the item be made. Also consider handing out healthy recipes that can go with the freshly prepared tortillas.
Although consumers are continuing to search for healthier options, they will still turn to the bakery for a delicious indulgence. Cater to customer needs by offering fresh bakery products that are scaled down. For example, cake pops, macarons and petit fours are all great ways to indulge without amassing too many calories.
Emphasize the freshness of your bakery's products by promoting the ingredients used to make the products. If items are made with natural ingredients, make sure to communicate that nutritional information to customers. Key ingredients to promote are maple, honey, real butter, coconut oil and olive oil. Consumers can also be lured in with the promise of local ingredients being used to create products.
To increase visits to the bakery, allow customers opportunities to customize baked goods. For example, have the bakery provide a bread slicer for optimal freshness.
