Fresh off the tails of Southern Exposure Produce Council (SEPC) tradeshow in Orlando, FLA, this past month, the DelFrescoPure® Euro Bean caught the crowd’s attention and piqued the interest of many attendees.

The soft, subtle taste is sure to enhance any dining experience. Like green beans and in the same family as the string bean, the DelFrescoPure® Euro Bean is crispy - offering a sweet flavor profile and can be steamed, stewed, sauteed or microwaved until they are tender. They are extremely versatile and can be served up as appetizers, added to soups or eaten cold as a side salad.

Side Dish Sophistication

Running under a variety of aliases – Romano bean, flat bean, broad bean, runner bean or Italian bean - the DelFrescoPure® Euro Bean offers a full-bodied and robust flavour, making them a praiseworthy option for a sophisticated side dish.

These snappy beans taste best cooked whether it is blanched, featured alongside crudité favorites, steamed, and dressed with lemon and olive oil, slowly braised in a tomato broth and potatoes or sauteed with garlic and served as a side dish. The possibilities are endless with these fibre rich and vitamin filled beans.

Market Update

Available in retail locations from April to September, DelFrescoPure® offers two pack sizes a 12oz poly bag with easy access zip lock and 10lbs bulk. Once brought home, they can remain the refrigerator for up to a week in the same bag they are packaged in.

Euro Bean Sauteed Garlic HerbsSource: DelFrescoPure

Ingredients

  • 12 oz Euro Beans®, washed and cut into 2-3” lengths on an angle
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, sliced
  • 1 tablespoon fresh chopped basil
  • 1 tablespoon fresh chopped parsley
  • Salt and pepper to taste

Directions

1. Blanch the beans in boiling water for 2 minutes, then quickly immerse in ice water to stop the cooking and set the bright green color. Drain well

2. Heat butter and olive oil in skillet over medium heat. Add garlic and sauté for a couple minutes, making sure it doesn’t burn. Add the drained Euro Beans and sauté until warmed (about 5 minutes)

3. Serve immediately tossed with fresh herbs. Season with salt and pepper

Cooking Tips

Other greenhouse vegetables can be added to the mix during the sautéing. Consider adding diced or julienne-cut Sweet Rainbow Peppers or halved Mini Mixers® tomatoes.

Euro Bean Tomato Salad

About This Recipe

Two veggies combine for a light, healthy summer salad. Mix up a simple vinaigrette made with fresh lemon juice, olive oil, and shallots. Pour it over crisp blanched Euro Beans and sweet halved G.R.EAT! Grab Rinse Eat grape tomatoes, stir in some parsley, and serve with Grilled Fish.

Ingredients

  • 1 shallot finely chopped
  • 1 lemon, juiced and zest finely grated
  • 1/4 cup extra-virgin olive oil
  • 1 package Euro Beans trimmed
  • 1 pint G.R.EAT! Grab Rinse Eat - Red grape tomatoes, halved
  • 1/4 cup fresh Italian parsley finely chopped

Directions

1. Bring a large pot of heavily salted water to a boil and prepare an ice water bath by filling a bowl halfway with ice and water; set aside. Meanwhile, make the dressing.

2. Add shallot, lemon zest, olive oil, lemon juice and measured salt and pepper in a medium, nonreactive bowl and add the lemon juice. While whisking constantly, slowly drizzle in the oil and whisk until evenly combined. Set the dressing aside.

3. Add the green beans to the boiling water and cook until crisp-tender, about 3 to 4 minutes. Drain and transfer to the prepared ice water bath. When the beans are chilled, drain again and thoroughly pat dry with paper towels.

4. Place the beans, tomatoes, and parsley in a large bowl, pour in the dressing, and toss to coat thoroughly. Taste and add more salt and pepper as needed.

Cooking Tips

This salad can be made up to 2 hours ahead, covered, and refrigerated. Toss briefly to recombine the flavors just prior to serving.
