Targeting the
American Foodie
On June 27, 2017, The Consortium du Jambon
de Bayonne (The Bayonne Ham Council)
announced its US debut. The council chose to
focus its international ambitions on America
due to the ever-evolving foodie movement.
American Foodies desire the attributes
and strict standards that Bayonne Ham
production is held to, certified and known for.
The Bayonne Ham Council Consortium was
created to promote Bayonne Ham in 1991. The

interprofessional body gathers all the players
involved with producing Bayonne Hams to
ensure every facet of the hams is as it should
be. This includes 950 pig farms, 39 livestock
producers, 23 cutting plants and 30 curing
units located in the Adour basin, all located in
Southwest France.
Local craftsmen only produce the hams in a
specific area, from a succinct list of whole
and natural ingredients, certified only to
