CHICAGO — The American Society of Baking (A.S.B.) has selected Corbion’s Verdad MP 100 as the winner of the A.S.B. Innovation Award in the Health, Wellness and Nutrition category.
Launched in September 2018, Verdad is a clean label replacement for calcium propionate, a synthetic mold inhibitor. Through a combination of vinegar and natural flavors, the ingredient prevents mold growth, subsequently extending the shelf life of bakery products.
"This recognition from A.S.B. is truly an honor," said Ashley Robertson, market manager, bakery, Corbion. "The baking industry runs on innovation, and there has been a tremendous amount of effort focused on trying to give consumers the simpler, friendlier labeling they want without taking away the shelf life and flavor they've come to expect. We're proud and pleased that Corbion accomplished that goal with MP100."
A.S.B. will present the award to Corbion at BakingTech 2019, being held February 24-26 in Chicago. In addition, Ms. Robertson and Jabin Olds, senior scientist, bakery applications, Corbion, will host the education session Inhibiting Mold Naturally at 2:10 p.m. on Feb. 25 at the event. They will discuss new methods for impeding mold growth without chemical preservatives.
