Marine biologist Nicolas E. Mendoza created OneForNeptune, a brand of white fish jerky, to address inefficiencies in the seafood supply chain.

The products feature the taste and texture of beef jerky but with more protein and omega-3 fatty acids and less saturated fat. Flavors include honey lemon ginger, Norse smoked sea salt and juniper, and fiery Cajun.

Mr. Mendoza said he launched the business to decrease seafood waste and underutilization. The wild-caught white fish are traceable to small-scale fisheries in the West coast.
