The Wisconsin Milk Marketing Board released its newly updated Cheesecyclopedia this week. The online resource is a self-study on Wisconsin cheese varieties and how to profit from an investment in Wisconsin cheese.

Developed for retail and foodservice professionals, the new edition of the Cheesecyclopedia follows the Wisconsin cheesemaking process from pasture to plate. It also provides:

  • Latest insights on merchandising and menuing cheese
  • Basics of proper cheese storage and handling practices
  • Delicious recipe and pairing ideas
