Condiments took center stage at the Winter Fancy Food Show Jan. 20 in Las Vegas, where recipe developer Molly Baz gave the keynote address, “Molly Baz on Controversial Condiments, CPG Launches, and Selling Big on Social.”

The latest addition to Baz’s product roster is a line of Ayoh! Foods branded flavored mayos, which come in four flavors: Hot Giardinayo, Tangyo Dijonayo, Dill Pickle Mayo, and the classic OG Mayo.

The launch of Ayoh! Foods followed Drink this Wine (Baz’s natural wine company), a hit YouTube series Hit the Kitch, and other successful food and beverage ventures. Winter Fancy Food Show attendees got a front-row seat as Baz shared unique insights, stories of “sandos” (sandwiches), and a look into how she developed, marketed, and sold out the first Ayoh! product line.

“In a time when so much is changing in specialty foods, Molly Baz is such a great person for Fancy Food Show attendees and exhibitors to hear from,” said SFA president Bill Lynch. “Today, her content, brands, and products are everywhere we look, but that didn’t happen by chance; like all emerging specialty food makers and brands, she put in tons of hard work to get to this point.”

“We’re gonna let you in on a little secret,” Baz said. “Sauce is the answer to almost all your food related problems. It’s a vehicle for flavor, it activates your palate, and keeps things (sorry to say it) moist. Ask literally anyone and they’ll tell you the most important ingredient on any sando is mayo.”

With that insight, Baz set out to make a line of mayos that deliver on every level: big flavor, tons of texture, and packed with deliciousness.

“We’re calling them sando sauces - a one stop shop to sandwich oblivion.”

During the pandemic, Baz said she found herself, like everyone else, stuck at home, making sandwiches and staving off boredom.

She noticed she was spending an inordinate amount of time chopping herbs, dicing peppers, slicing pickles, and whisking aiolis, all in service of creating the perfect “sando.” The Ayoh! line of mayos was born.
