New from Gayo Azul, the Hispanic cheese brand with Dutch influences, is a Queso Fresco — the top variety in the Hispanic cheese category, said Josh Rosen, brand manager for Gayo Azul, which is owned by FrieslandCampina Dairy North America.

The Gayo Azul line, which also includes Cotija, Queso Blanco and Queso Para Freir, is enjoying strong demand at retail, Rosen said, citing Circana research which found that more than one-third of shoppers purchased Hispanic cheese within a three-month period in the second half of 2024, and that the category has enjoyed more than 20% growth over the past two years.

Gayo Azul’s Cotija is a firm and crumbly Mexican aged cow’s milk cheese with a sharp, slightly salty flavor, perfect for enchiladas, tacos, and street corn toppings.

Queso Blanco is a white cow’s milk cheese with a slightly salty and mild flavor. Its young age creates an irresistibly creamy yet crumbly texture that holds its shape well, making it ideal for grilling.

Queso Para Freir is a white cow’s milk cheese with a slightly salty, mild flavor, known for its higher melting point, perfect for frying, sandwiches, and baked dishes.

“The growth is driven by the expanding popularity of Hispanic flavors and cooking styles,” Rosen said. “We’re always closely monitoring market trends to anticipate consumer preferences. Our focus is on offering high-quality Hispanic-style cheeses that add authentic flavor and versatility to everyday cooking and entertaining.”

Gayo Azul cheeses boast a firm texture and a subtly salty, mild flavor profile, Rosen said. Renowned for their high melting point, the cheeses’ alluring consistency softens upon cooking.

The blending of Hispanic and Dutch traditions makes them unique, he added.
