Many supermarkets have in-store bakeries that offer customers the convenience of purchasing fresh breads, cookies, muffins, cakes and more, along with their other groceries. These in-store bakeries may also have aging mixers that they are using to mix up these baked goods — and that can create issues in the long term.
Ongoing service, such as replacing belts, gears and the motor, adds to the total cost of owning an older mixer and the frequency of repairs tends to increase over time. Also, older mixers can start to experience performance issues. Gear and belt wear slowly lowers the RPMs, impacting mix time and the quality of the product. In-store bakeries may find that they are wasting dough or batter as a result.

The power and performance of the Legacy+ mixers come from the PLUS System — a combination of three Hobart-exclusive technologies that allow for continuous mixing, batch after batch.
First, the VFDadvantage precisely monitors the motor and RPMs, which protects the mixer from overheating. The technology also drives more power to the bowl, allowing the mixer to mix up to 30% more in the same size bowl (depending on the application). Second, maximum-capacity overheat protection features extreme-duty wiring and connections that manage more power so it’s possible to mix heavy ingredients. Lastly, a reinforced planetary shaft system increases mixer capacity and overall product output by providing more power.

Hobart has also recently added an exclusive NoChipMax™ System to its 60-quart Legacy+ mixers. This system consists of a NoChip™ aluminum planetary with a metallic gray hybrid powder finish, which is corrosion and scratch resistant and replaces the cast iron painted planetary of the previous design. The system also includes a NoChip #12 taper attachment hub that has a stainless-steel insert and die-cast cover — combined, these prevent chipping when using mixer attachments.
